Less posing, more substance.   <\/p>\n<p>Whether they are filled with ricotta and Parmigiano Reggiano, herbs, pumpkin, or potatoes, the principle is simple: the sauce must be at the service of the tortellone, not the other way around. The shape is large, the filling is the protagonist, so every choice\u2014from cooking to the plate\u2014really matters. <\/p>\n<h2>Tortelloni how to serve them: the right condiment<\/h2>\n<p>The classic butter and sage remains the safest starting point, especially for ricotta and herb tortelloni.
